taste
The rye whiskey starts with sweetness. Hints of cherry pits and vanilla, and then the spice of the rye comes in on the tip of my tongue, but it has a soft mouthfeel to it.
Mid-palate, there are subtle notes of caramel and golden maple syrup with some tobacco and cinnamon notes as it becomes buttery smooth, and well-rounded between the sweet and spicy characteristics.
finish
A nice clean finish with ginger, black pepper spice, and moderate warmth with a dry sawdust bite.
aging process
Our Flagship Aspen Aged Rye Whiskey is aged two years in brand new 30-gallon oak barrels from the Barrel Mill out of Minnesota. We use char levels 2, 3, 4, and 5. After the two years of aging, we blend the whiskey in large tanks.
We then finish the whiskey by dropping in hand cut and hand charred aspen wood discs that float in the whiskey for additional eight months.
We then blend again before bottling.

We age our Single Barrel Aspen Aged Rye Whiskey for three years in new 30-gallon oak barrels from Minnesota’s Barrel Mill; we select from char levels 2, 3, 4, and 5.
We finish the whiskey by dropping hand-cut and charred aspen wood discs in the barrel for an additional eight months, keeping each barrel in separate 50-gallon drums.
recommendation
“I always recommend Locke + Co, especially if you’re a rye whiskey lover. If you want some next-level whiskey out of the brand, this bottle is a must-pick-up for you. The increased proof is one of my favorite parts of it, being mainly a bourbon drinker. The difference I notice and love compared to their small batches is the stronger vanilla and leather notes. My overall thought on the Single Barrel is that if you see it on the shelf, you must pick it up, and I promise you won’t be disappointed.”

aging process
We started with a mash bill of 95% rye and 5% barley. We aged that for 2 years in new 30 gallon american oak barrels, added the hand cut hand charred aspen wood to the whiskey for 8 months, and then finished the whiskey in a 59 gallon Nebbiolo wine barrel for 13 months.
