Taste


The rye whiskey starts with sweetness. Hints of cherry pits and vanilla, and then the spice of the rye comes in on the tip of my tongue, but it has a soft mouthfeel to it.

Mid-palate, there are subtle notes of caramel and golden maple syrup with some tobacco and cinnamon notes as it becomes buttery smooth, and well-rounded between the sweet and spicy characteristics. 

Finish


A nice clean finish with ginger, black pepper spice, and moderate warmth with a dry sawdust bite.

Aging Process


Our Flagship Aspen Aged Rye Whiskey is aged two plus years in brand new 30-gallon oak barrels from the Barrel Mill out of Minnesota. We use char levels 2, 3, 4, and 5. After the two years of aging, we blend the whiskey in large tanks.

We then finish the whiskey by dropping in hand cut and hand charred aspen wood discs that float in the whiskey for additional eight months.

We then blend again before bottling.
